Potato Latkes Recipe

1/2 CubeMelted Butter/Margarine
4Large Baking Potatoes
2Large Onions (white)
3Eggs beaten well
3 Heaping tablespoonsFlour
1 1/2 teaspoonsOnion Salt
1 1/2 teaspoonsSalt
1 1/2 teaspoonsPepper

Grate 2 potatoes, then one onion, then the remaining potatoes and onion. Mix all ingredients together thoroughly using the flour to thicken the mixture as necessary.
Heat a light (corn, canola, extra virgin olive) oil in a frying pan and pour about 3 tablespoons of mixture into the pan to make each latke (as if you were making 2-3" diameter pancakes).
Fry until golden brown, turning once.
Let cool on an elevated rack to allow excess oil to drain off.
