Potato Latkes Recipe
|1/2 Cube||Melted Butter/Margarine|
|4||Large Baking Potatoes|
|2||Large Onions (white)|
|3||Eggs beaten well|
|3 Heaping tablespoons||Flour|
|1 1/2 teaspoons||Onion Salt|
|1 1/2 teaspoons||Salt|
|1 1/2 teaspoons||Pepper|
Grate 2 potatoes, then one onion, then the remaining potatoes and onion.
Mix all ingredients together thoroughly using the flour to thicken the mixture as necessary.
Heat a light (corn, canola, extra virgin olive) oil in a frying pan and pour about 3
tablespoons of mixture into the pan to make each latke (as if you were making 2-3" diameter
Fry until golden brown, turning once.
Let cool on an elevated rack to allow excess oil to drain off.
